Hey guys, so I was about to make a boxed bread mix (yes boxed! I was cooking with my niece and I like to keep it simple!) when I realized, I had no eggs!
Now let me preface this by saying I'm not a vegan, only a vegetarian. I tried it a couple of years ago but I broke down and had a very delicious omelet with extra cheese.
Back to my morning.... So I figured I must've had something I could substitute for eggs. There was flax seed meal (tried that before, came out okay, I'd give it a B), oatmeal (stabilizes the baked good, but add extra milk/water, can dry out) and applesauce. So I opted for two out of three; applesauce and oatmeal. I know sounds crazy huh?
So here's my ingredients:
• Pillsbury Banana Bread Quick Mix
• 1 cup cinnamon applesauce
3/4 c oats (quick oats work better), 1/2c for batter and 1/4c for topping
1/3 c coconut oil plus 1 tbsp (for topping)
• 1 c soy milk, if not available, use water
First, preheat the oven to 375° and grease and flour your loaf pan. I like to use the dry mix instead of flour.
So I made the batter by combining all the dry mix from the box, applesauce, 1/2c of oats, 1/3c coconut oil, and 1c of soy milk.
In a separate bowl I combined the 1/4c of oats with the tbsp of coconut oil. If you have walnuts, a 1/4c can be chopped and added to this mix of oats and coconut oil.
