So I wanted to come back with something I think is spectacular. It was part of a sampling program from Green Mom's Meet. It's called Modern Table Meals, you can check it out here. They make bean pasta meal starters that are gluten-free and vegetarian, but of course you can add chicken or beef or whatever you'd like.
The kit comes with everything including the bean pasta (made with either lentils or white beans), veggies and the pasta sauce.

The box that came to my door included 4 meal kits, a wooden spoon and a cute little tote as well as recipe ideas and coupons. The four meals that came was Homestyle Mac & Cheese, Teriyaki, Mediterranean, and Italian.
I decided to make the Homestyle Mac & Cheese first. Now per serving, this meal had a whopping 24g of protein and 5g of fiber!!! And there are 4 servings per bag, though I think 2 servings are more realistic.

I started a pot of water, at least 4 qts will suffice, while I prepared the sauce. For the sauce I had to mix the dry mix with 2/3 c of water and 2 tbsp of oil.
Once the water came to a boil, I added the pasta and vegetables, all at once, to the pot and let that go for about 8-9 minutes.
Oh and by the way, the froth is natural! It's the starch coming off the beans in the pasta.

Finally I just strained it and tossed it with the sauce I made earlier! Easy peasy! But me being me, I love garlic in everything. Like I'm prepared to be buried with it. So I added a sprinkle of granulated garlic.
It was so yummy!!!! Completely tasty and secretly yummy! I was basically eating a bowl of cheesy vegetables! And the ultimate test came when I let the children try it. And would you believe it? They asked for more! I love the subterfuge! Heeeheeeheee!!!

So basically this whole post was a big way of saying I have a new best friend in the kitchen! Delicious and healthy and also very visually appealing!
